A whole lion's mane pressed in a screaming-hot cast-iron pan until golden and meaty, then glazed with a quick soy, maple and rice vinegar sauce. Simple technique, stunning result.
Ingredients
- 1 large lion's mane mushroom (350–450g)
- 1–2 tbsp olive oil (or butter + oil)
- 2 tbsp soy sauce or tamari
- 1 tsp rice vinegar and 1 tsp maple syrup
- Salt, pepper and optional garlic clove + thyme to baste
- Steamed broccoli, to serve
Method
- Heat oil in a cast-iron skillet over medium-high; season with salt and pepper.
- Press the whole mushroom under a second heavy pan; sear ~4 min until golden.
- Flip, press again 4–5 min until it releases its liquid; cook the liquid off.
- Add garlic and thyme; baste.
- Stir together soy, vinegar and maple; drizzle over and glaze 30 sec.
- Slice thick and serve with broccoli.
