This is raw honey—elevated. We filled a once-used American oak bourbon barrel from Renegade Spirits (Eden Brewery) with raw Mussett honey and let time do the work. Over six slow months, the honey absorbed the deep bourbon aromas trapped in the oak: gentle spice, toasted timber, and hints of butterscotch. The result is a unique smooth, complex honey that’s perfect for drizzling, sipping, pairing with cheese… or enjoying straight from the jar. Every batch is small, every bottle numbered.
