Crispy, golden, dippable — lion's mane torn into nugget-sized pieces, crumbed in a parmesan panko coat and air-fried until shatteringly good. The easiest crowd-pleaser in the air fryer, ready in under 30 minutes.

Ingredients

  • 300g lion's mane, torn into nugget-sized pieces
  • 1/2 cup flour and 2 eggs, beaten
  • 1 1/2 cups panko and 1/3 cup grated parmesan
  • 1 tsp Italian seasoning, 1 tsp garlic powder and 1/2 tsp smoked paprika
  • Salt, pepper and oil spray
  • Dipping sauce (aioli or ketchup), to serve

Method

  1. Pat the mushroom pieces very dry.
  2. Mix panko with parmesan, Italian seasoning, garlic powder, paprika and salt.
  3. Coat each piece: flour → egg → panko mix.
  4. Spray the air-fryer basket; arrange nuggets in a single layer and spray the tops.
  5. Air-fry at 190°C (375°F) ~7–10 min, flipping halfway, until golden and crisp.
  6. Serve hot with dipping sauce.
