Crispy, golden, dippable — lion's mane torn into nugget-sized pieces, crumbed in a parmesan panko coat and air-fried until shatteringly good. The easiest crowd-pleaser in the air fryer, ready in under 30 minutes.
Ingredients
- 300g lion's mane, torn into nugget-sized pieces
- 1/2 cup flour and 2 eggs, beaten
- 1 1/2 cups panko and 1/3 cup grated parmesan
- 1 tsp Italian seasoning, 1 tsp garlic powder and 1/2 tsp smoked paprika
- Salt, pepper and oil spray
- Dipping sauce (aioli or ketchup), to serve
Method
- Pat the mushroom pieces very dry.
- Mix panko with parmesan, Italian seasoning, garlic powder, paprika and salt.
- Coat each piece: flour → egg → panko mix.
- Spray the air-fryer basket; arrange nuggets in a single layer and spray the tops.
- Air-fry at 190°C (375°F) ~7–10 min, flipping halfway, until golden and crisp.
- Serve hot with dipping sauce.
