A 15-minute umami side that punches well above its weight. Gourmet mushrooms tossed in olive oil, soy, garlic and thyme, then crisped in the air fryer and finished with a snowfall of parmesan. Serve as a side or pile on toast.
Ingredients
- 500g mixed gourmet mushrooms, halved if large
- 2 tbsp olive oil and 2 tbsp soy sauce
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- 1 tsp fresh thyme
- 3 tbsp grated parmesan and salt, pepper
- Chopped parsley, to finish
Method
- Toss the mushrooms with oil, soy, garlic, thyme, salt and pepper.
- Air-fry at 190°C (380°F) for 5 min; shake the basket.
- Sprinkle over the parmesan; air-fry 5–7 min more until golden and crisp at the edges.
- Finish with parsley. Serve as a side or piled on toast.
